Broccoli, Currant, Chickpea & Almond Salad Recipe

Hearty, satisfying and packed with flavour! This delicious Broccoli, Currant, Chickpea and Almond Salad recipe is made that much tastier with our keto-friendly Lemon & Turmeric Salad Dressing.
1 large (approx. 400g) head broccoli, trimmed and cut into small florets
400g can chickpeas, rinsed, drained
4 green onions, thinly sliced
1 long fresh green chill, deseeded, finely chopped
1/4 cup chopped fresh coriander
2 tablespoons currants
1/3 cup (35g) toasted flaked almonds
1/4 cup (60ml) Celebrate Health Lemon, Turmeric & Apple Cider Dressing
- Steam broccoli until just tender, approximately 5 minutes. Drain. Refresh under cold running water and drain.
- Combine broccoli, chickpeas, green onions, chilli, coriander, currants and half the almonds in a large bowl.
- Add Celebrate Health Lemon Turmeric Vinaigrette & Apple Cider Dressing and toss gently to combine. Season with salt and pepper. Serve sprinkled with remaining almonds.
